Every year at the season offall and winter lights up flame of Armagnac ! During this period, everyone lives to the rhythm of distillation of our “Gersoise spring water”: Armagnac. The inhabitants of the country take the opportunity to come together and share moments of friendliness about areas. Between two dishes at the foot of theStill, we laugh, we exchange and we toast in unison! Let's go for the evening Domaine de Polignac !


Visit to the cellar 🏡

When I arrived at the estate I was given a tour of the chai by Rémi, the owner! THE Domaine de Polignac is a family estate passed down for 7 generations! In the mid-1980s, Marylène and Jacques, Rémi's parents, began producing Gascogne floccu (Gascon aperitif which consists of 1/3 Armagnac and 2/3 grape juice). They are among the first winegrowers to embark on the adventure. But already before that, theArmagnac had taken an important place at the Domaine with the Fabrier brand, the name of the plot where their Ugni blanc (main grape variety for the production of Armagnac). In 2020, Rémi takes up the torch of the family estate and launches his range of wine “Gascanza”, contraction of the Franco-Spanish term “Gascon Hope”. Today the Estate has approximately 30 ha of vines en organic farming.

Discovery of theStill ! An impressive machine capable of producing this famous nectar: ​​the Blanche d'Armagnac. We taste it directly at the exit of the spout, each turn ! Goodbye silverware and crystal glasses, helloveal axoa and the traditional Crisp for dessert ! With moderation ? Not with us! Here theappetite is a compliment and excess is a declaration of love.🥰 You will have understood… there are no photos of the flat because it’s not “Instagramable” but we don’t care because it’s eXextremely bOn 😅

It's the end of the party drink. This is the flambéing of Armagnac blanche in a copper saucepan! A fire show that will delight young and old! We add citrus fruits🍋 to the preparation and we can finally enjoy it with a coffee☕
